SHRIMPS IN BLACK BEAN SAUCE WITH GINGER AND SCALLIONS

2 tablespoons Fermented salted black beans
2 tablespoons Dry sherry or shao hsing wine
2 cups Peanut, vegetable, or corn oil
1 pound Shrimp, peeled and deveined
3 each Scallions, sliced thinly
4 each Garlic cloves, minced
12 each Ginger slices, julienned
½ teaspoon Sugar

  • Mix beans and wine.
  • Deep fry shrimp. Reserve.
  • Stir fry veg. Add sugar. Return shrimp, heat and serve.
