Soy Milk Sweet Custard

Makes 4 servings

1 ½ cups low fat soy milk
2 eggs
5 tablespoons brown sugar
1 teaspoon vanilla

Preheat oven to 350°.

Mix all ingredients well with a whisk and pour into 4 ramekins or custard cups.  Place ramekins into a deep-sided baking dish and fill dish with hot water until the water level is half way up the sides of the ramekins. Bake for approximately 30 minutes or until the custard is set.

Serve warm or chilled

*Another option is to leave out the sugar entirely and top with fresh seasonal fruit
