The Chicago winter is finally behind us and now it is time to celebrate spring and summer. This includes seasonal indulgences of all kinds. Of course, first and foremost, we pay homage to the fresh, local bounty at markets.
Fresh peas are hitting the stands and Sweet Pea Hummus (click here for the recipe) is one of my go to snacks when the weather lightens up. Soon, cherries and peaches will be perfect and begging to be baked into a pie or turned into to a sauce for grilled pork chops. Watermelon Salad with Feta or just off the rind is good too.
Tomatoes and corn round out the end of summer. Tomatoes with salt and a schmear of mayonnaise, just the way my Uncle Tommy would like them. I used to think that this was disgusting but I get it now. Corn for dinner at my house was always simply boiled and served with butter. The corn was allowed to speak for itself. We would eat it only after we had enjoyed the main bit of dinner and then we would all get a new plate with a piece of corn on it. It was its own course.
It’s going to be a beautiful summer in Chicago! Take advantage of every day that we long for in the winter. Make your own list of summertime treats and make sure that each one is crossed off by September 1st! It will be time for a new list then.
