We are pleased to introduce Food Comics from The Chopping Block where our resident Cartoonist Tom O'Brien illustrates his cooking adventures. In this edition, he shares a different way to make oatmeal.

Baked Oatmeal with Blueberries and Banana

ingredients:

  • 3 cups dry oatmeal
  • 1 1/2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3/4 teaspoon salt
  • 2 1/4 cups milk
  • 3 eggs
  • 1/2 cup syrup, maple preferred
  • 2 teaspoons vanilla extract or vanilla bean paste
  • 2 to 3 large bananas, peeled and divided
  • 2 cups fresh blueberries

How to cook Baked Oatmeal with Blueberries and Banana

  1. Preheat oven to 350 degrees.
  2. While it heats, mix the dry oatmeal with the baking powder, cinnamon, nutmeg and salt in a large bowl. Toss to combine.
  3. In a different bowl, beat the eggs with the milk, syrup, and vanilla.
  4. Add the wet ingredients in with the dry and stir until well combined.
  5. Slice half of the banana into circles and dice the other half.
  6. Mix the diced banana and blueberries in with the oatmeal mixture, and then pour everything into a greased baking pan, roughly 9 x 13. 
  7. Top the mixture with the banana circles.
  8. Into the oven it goes, for 35 to 40 minutes. 
  9. Ideally, the edges will have firmed up, but the middle will still have a little jiggle to it.
  10. Let sit for around 5 minutes, scoop and serve as is or with extra syrup.
