Still have Leftovers? Make Turkey Egg Rolls

I am the queen of always making too much food on any occasion, but on Thanksgiving I go above and beyond.  If I only have five people coming for Thanksgiving dinner? I think a 25 pound turkey will be perfect!

This recipe is great not only to use up leftover turkey, but these are delicious apps you can make after Thanksgiving, or make it a meal by cooking up some green beans or any other vegetable you like on the side.

I love this Marion's Kitchen sauce, which can be found at most Walmart's, but if you can't find it, just use your favorite Asian sauce you would use for stir fry.

Turkey Egg Rolls

Serves: 6 

Cooking Time: 10 minutes

  • 1 pound leftover turkey breast, chopped
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 tablespoon chili garlic paste
  • 2 tablespoons Marion's kitchen beef Thai pepper sauce
  • 1 teaspoon brown sugar
  • 1 pinch of salt
  • 1/2 teaspoon ground pepper
  • 12 egg roll wrappers

Heat a large pan on medium. Add the carrots, cabbage, chili garlic paste, pepper sauce, brown sugar, salt and pepper and cook for 5 minutes. Stir in the turkey and cook for 1 more minute. Let cool.

You will need to make an egg wash which consists of one egg yolk and one teaspoon water mixed together.

Lay 12 egg roll wrappers on your cutting board. Add about 1/4 cup of the filling to each one, brush the sides with the egg wash, and roll up.

Preheat the air fryer at 380 degrees for 10 minutes. Do this while you make the egg rolls. Brush with avocado or grapeseed oil and cook for 10 minutes, flipping after 5 minutes.

That's it! So easy, crispy and delicious and a great way to use up leftover turkey that doesn't taste like Thanksgiving.
