Favorite childhood food experience: Baking Chocolate Chip Cookies with my Dad.  

What made you want to become a chef? Ha! It started as a way for me to stay out of trouble and fell in love with it shortly afterwards.

What is your signature dish? Anything with Hollandaise.

What are the 5 ingredients you can't live without? Fish sauce, spicy peppers, lime, cilantro and eggs.

What do you love about cooking? The making and eating of the food with family and friends.

When you're creating a new recipe, what influences and inspires you? My mood and surroundings. 

What advice would you give a new cook? The kitchen you start working in is your new family, treat them thusly.

What are you doing when you're not cooking? Reading about food, trying to find some nature in this city and catching up with friends.

Describe your perfect evening. Having friends over for drinks, music and food.

If you had friends in from out of town, where would you take them to eat? Cho Sun Ok

What was your favorite vacation? Chengdu, China

What are your hobbies? Cooking, reading, traveling 

What is your favorite band? I have way too many to choose from.

What are your guilty pleasures? Yeah, I'm not going there!

  • Work clean and clean as you go.
  • Keep it simple, stupid (KISS).
  • Have good situational awareness.
