Apple, Dried Cherry Salad with Maple Dressing

This salad is a Chopping Block classic. It works well for an upscale dinner party or the start to a simple weeknight meal. This is a recipe you'll want to make over and over!

For this recipe you’ll need:

  • For the salad:
  • 4 cups mixed greens
  • 1 tart apple such as Granny Smith, julienned
  • 1/3 cup dried tart cherries
  • 1/3 cup pecan halves, toasted
  • For the dressing:
  • 2 tablespoons mayonnaise
  • 2 tablespoons pure maple syrup
  • 1 to 2 tablespoons Champagne vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

 

  1. Toss together the mixed greens, apples and dried cherries in a large salad bowl.

  2. To prepare the dressing, whisk together the mayonnaise, maple syrup and Champagne vinegar. Drizzle in the olive oil while whisking rapidly until combined. Season with salt and pepper to taste.

  3. Toss the salad with just enough dressing to coat, and top with the toasted pecans.
