Watermelon and Arugula Salad

This summer salad combines the sweet fruit of watermelon with peppery green of arugula for a delicious combination with a savory vinaigrette and crunchy nuts.

For this recipe you’ll need:
  • 2 cups seedless watermelon, medium dice
  • 2 cups arugula
  • 1 small shallot, thinly sliced
  • 2 Tablespoons fresh mint, chiffonade
  • Red wine vinegar, to taste
  • Extra virgin olive oil, to taste
  • Salt and pepper, to taste
  • 1/3 cup sliced almonds, toasted


Directions:
  1. Gently toss together the watermelon, arugula, shallot and mint.
  2. Dress with the vinegar and olive oil to taste and season with salt and pepper.
  3. Spoon the salad onto plates and top with a sprinkling of the toasted almonds.
