Butchery Boot Camp

Are you ready to take your knife skills to the next level? We'll teach you essential butchery techniques so you can tackle meat preparation like the pros. You'll then use your handiwork to prepare four delicious dishes.

  • Pan-Roasted Chicken with Honey and Almonds
  • Baked Fish en Papillote
  • Mediterranean Leg of Lamb with Tapenade
  • Sautéed Pork Medallions with Mushroom-Cognac Reduction

Skills Covered in Class Include:

  • Breaking Down and Deboning Chicken
  • Boning and Filleting a Whole Fish
  • Cleaning, Butterflying, Stuffing and Tying Leg of Lamb
  • Trimming and Cutting Pork Tenderloin

1-week cancellation policy. Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 4 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
