Arugula Salad with Pine Nuts and Lemon Vinaigrette

This light salad combines spicy arugula, crisp celery, juicy tomatoes, hearty pine nuts and is dressed with a bright citrus vinaigrette.

For this recipe you’ll need:


  • For the vinaigrette:
  • 1 shallot, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1/4 to 1/3 cup extra virgin olive oil
  • Salt and pepper to taste
  • For the salad:
  • 4 cups baby arugula
  • 1/2 pint cherry or grape tomatoes, halved
  • 2 ribs celery, thinly sliced
  • 1/4 cup pine nuts, toasted
    1. To prepare the vinaigrette, whisk together the shallots, lemon juice and Dijon mustard. Slowly drizzle in the oil while whisking to create a temporary emulsion. Season with salt and pepper to taste.

    2. Toss together the arugula, tomatoes, celery and pine nuts in a salad bowl. Dress with the vinaigrette, and add salt and pepper to taste.
