Macadamia Nut Fudge  

This tasty fudge couldn't be easier to make so don't wait until the holidays to whip up a batch!

Start to Finish: 1 hour, 15 minutes

For this recipe you’ll need:

  • 1 1/2 cups unsalted macadamia nuts
  • 2 1/4 cups granulated sugar
  • 3/4 stick (6 tablespoons) unsalted butter
  • 6 1/2 ounces evaporated milk
  • 3/4 pound semisweet chocolate chips
  • 3 1/2 ounces marshmallow cream
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  1. Line a 9-inch square pan with parchment paper.

  2. Place the macadamia nuts in a resealable bag. Close the bag and pound the nuts lightly with a mallet to coarsely chop them. Set aside.

  3. Combine the sugar, butter and evaporated milk in a heavy saucepan and bring to a simmer over medium heat. As soon as the mixture begins to boil, check the time and continue to cook for 5 minutes, stirring constantly.

  4. Remove from the heat and stir in the chocolate, marshmallow cream, salt and vanilla. Fold in 1 cup of the chopped nuts.

  5. Pour into the prepared pan and spread evenly. Sprinkle the top with the remaining chopped nuts, pressing them in slightly.

  6. Chill until firm, and then cut into 1-inch squares.
