Melon Gazpacho Salad

This salad mixes sweet and savory ingredients topped with the crunch of toasted almonds.

For this recipe you’ll need:

  • 1/2 small cantaloupe or honeydew, peeled, seeded and cut into medium dice, or scooped with a melon baller
    1/2 seedless cucumber, halved and thinly sliced
    2 oranges, segmented
    3 vine-ripe or heirloom tomatoes, large dice
    2 tablespoons fresh basil, chiffonade
    Sherry vinegar and extra virgin olive oil to taste
    Salt and pepper to taste
    1/3 cup sliced almonds, toasted
      1. In a medium-size bowl, gently mix together the melon, cucumber, orange segments, tomatoes and basil.

      2. Dress with sherry vinegar and olive oil, and season with salt and pepper to taste. Allow to marinate for at least 30 minutes.

      3. Sprinkle the toasted almonds on top before serving.
