Pear Clafoutis

 

Pear Clafoutis is a simple yet elegant dessert that’s layered with fresh pears and bakes up with a delicious custard center and golden souffle top.

For this recipe you’ll need:

 

  • 1 1/4 cups whole milk

  • 1/3 cup granulated sugar

  • 3 eggs

  • 1 tablespoon vanilla extract

  • 1/2 teaspoon ginger, freshly grated

  • Pinch of salt

  • 1/2 cup all-purpose flour

  • 2 semi-ripe pears, peeled, cored and cut into 1/2-inch slices

  • 1/4 cup granulated sugar

     

  • Powdered sugar for dusting

      1. Preheat the oven to 350°. Butter a 10-inch pie dish and set aside.

      2. In a large bowl, whisk together the milk, 1/3 cup sugar, eggs, vanilla, ginger, salt and flour. Alternatively you can use a blender to mix these ingredients.

      3. Pour a 1/4-inch layer of the batter in the prepared pie dish. Bake for about 12 to 15 minutes, until the batter is set.

      4. Remove the pan from the oven. Arrange the pear slices in concentric circles, and sprinkle with the remaining 1/4 cup of sugar. Pour the remaining batter over the pears..

      5. Bake for an additional 45 minutes to 1 hour or until the clafoutis is puffed and golden brown and the pears are tender. Allow to cool for about 15 minutes.

      6. Cut into wedges, and generously dust with powdered sugar.
