Rum-Glazed Grilled Plantains with Ice Cream

There's more to plantain desserts than just deep-fried treats! Try these plantains on your grill.

For this recipe you’ll need:

  • 1 1/2 cups dark rum

  • 1/2 cup dark brown sugar

  • Pinch of salt

  • 2 tablespoons butter, cut into small pieces

  • 3 ripe plantains (skins almost black), peeled, cut in half lengthwise and then halved crosswise

  • Grapeseed oil as needed

  • Vanilla ice cream

    1. Heat a gas or charcoal grill over medium heat.

    2. To prepare the glaze, place the rum, brown sugar and salt in a saucepan and bring to a boil. Reduce the heat to a simmer and cook until the glaze has thickened. Remove from the heat and whisk in the butter. Set aside.

    3. Brush each side of the cut plantains with the grapeseed oil, and grill until caramelized on each side.

    4. While the plantains are grilling, place a scoop of ice cream into your bowls.

    5. Brush the plantains with the glaze right before they come off the grill. Place the plantains on top of the vanilla ice cream, and drizzle with additional glaze.
