Chocolate is one of the most complex and popular ingredients in the world. We will uncover its secrets and teach you the ins and outs of how to expertly work with this exotic ingredient.

  • Understanding different varieties of chocolate 
  • Tempering 
  • Melting chocolate 
  • Making and baking custard  
  • Mixing cake batter 
  • Determining cake doneness 
  • Preparing mousse 
  • Making ganache 
  • Preparing tart dough  

1-week cancellation policy. Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
