Baked Apple with Cashew Cream

This vegan dessert recipe is compliments of Dawn Jackson Blatner and featured in a vegan cooking class at The Chopping Block.

Start to Finish: 1 hour, 10 minutes

For this recipe you’ll need:

  • 2 Tablespoons dried cherries
  • 2 Tablespoons raisins
  • 2 Tablespoons chopped raw almonds
  • 2 Tablespoons chopped raw walnuts
  • 1/2 teaspoon cinnamon
  • 4 small apples, cored
  • Creamy Cashew Topping:
  • 1/2 cup raw cashews
  • 1/4 cup almost boiling water
  • 1 Tablespoon 100% pure maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
    1. Preheat oven to 350 degrees F.

    2. Puree cashew topping ingredients until smooth. Chill in refrigerator.

    3. Combine cherries, raisins, almonds, walnuts and cinnamon.

    4. Stuff apples with dried fruit and nut mixture.

    5. Place apples in baking dish misted with cooking spray.

    6. Bake for 40 minutes until apples are tender.

    7. Served baked apple with cold cashew topping.
