Grilling Boot Camp

Join us for our comprehensive all-day, hands-on grilling workshop. Master the ins and outs of grilling with charcoal, gas and wood while learning tips and methods in brining, marinating, slow cooking, smoking, dry and wet rubs. You will leave this class feeling "fired up" for an adventurous grilling season. Jump on board, whether you're a novice or a weekend warrior!


Grilling Boot Camp menu:

  • Brined and Smoked Jerk Chicken Thighs with Grilled Pineapple Slaw  
  • BBQ Ribs with Chipotle-Cherry BBQ Sauce 
  • Whole Grilled Trout with Grainy Mustard Sauce and Grilled Fennel-White Bean Salad
  • Grilled Strip Steaks with Charred Scallion Sauce and Grilled Steak Fries 
  • Grilled Pizza with Charred Peppers, Zucchini and Goat Cheese
  • Wood Fired Stone Fruit Bread Pudding

Skills covered in class:

  • Setting up and maintaining a charcoal grill
  • Cooking over direct and indirect heat
  • Marinating, brining, rubbing and smoking
  • Selecting chicken, pork ribs, fish and beef
  • Determining protein doneness
  • Working with fresh herbs and spices
  • Baking on a charcoal grill
  • Balancing flavors
  • Grilling fruits and vegetables

3-day cancellation policy. Due to the layout of our kitchens and in consideration of your classmates, students will work in groups of 3 to 5 people. Parties of 6 or more will be directed to our private events department so we can accommodate them appropriately.
