Pie & Tart Boot Camp: Fall Menu

Making pies isn't as hard as you might think! Get tips from a pro on how to make tender, flaky crusts, wrap them around sweet and savory fillings, and bake them to golden perfection in this hands-on class.

  • Individual Maple Cream Pie
  • Roasted Root Vegetable and Ricotta Galette
  • Spiced Apple Hand Pies with Bourbon-Cider Glaze
  • Fig Jam and Frangipane Tart with Balsamic-Poached Figs

    Skills Covered in Class Include:
  • Making and rolling out pie dough 
  • Preparing cream cheese pastry 
  • Blind baking
  • Making and baking custard
  • Whipping cream
  • Preparing fruit fillings
  • Using cornstarch as a thickener
  • Preparing glazes
  • Roasting root vegetables
  • Working with fresh herbs and spices
  • Poaching
  • Working with almond paste

In this hands-on class, students will be paired in groups of three to five and work together as a team to prepare the recipes.
