Pie & Tart Boot Camp: New Menu

Roll up your sleeves and learn how to take your pie and tart skills to the next level! In this intensive hands-on class, our chef will teach you how to prepare four different doughs from scratch along with delicious sweet and savory fillings baked to perfection. We’ll also cover the importance of ingredients and temperatures to help you build the knowledge and techniques needed to bake confidently at home. Get ready to create stunning pies and tarts that taste as good as they look!

Menu:
  • Frosted Strawberry Hand Pies with Cream Cheese Pastry 
  • Chocolate Peanut Butter Pie with Salted Pretzel Crust
  • Mango Passionfruit Tart with Hot Butter-Toasted Coconut Crust 
  • Zucchini, Yellow Squash and Tomato Galette with Pie Dough 

    Skills Covered in Class Include:
  • Making and rolling out pie dough 
  • Preparing cream cheese pastry and pretzel crusts
  • Making hot butter pastry  
  • Blind baking
  • Preparing fruit jam
  • Making mousse
  • Working with chocolate
  • Whipped cream
  • Piping
  • Preparing fruit curd
  • Using cornstarch as a thickener
  • Preparing glazes

In this hands-on class, students will be paired in groups of three to four and work together as a team to prepare the recipes.
