Fried Plantains

Look for ripe plantains with peels that are almost completely black for this recipe.

For this recipe you’ll need:

  • 1/4 cup oil for frying
  • 2 ripe (brown) plantains, peeled and sliced on the bias about 1/2 inch thick
  • Salt to taste
    1. Heat the oil over medium heat in a heavy sauté pan.

    2. Add the plantains and cook until very brown on each side. Transfer to a paper towel-lined plate and sprinkle with salt to taste.
