Yield: 6 servings
Active Time: 35 minutes
Start to Finish: 35 minutes
For this recipe you’ll need:
Preheat the oven to 350º.
Lay the bacon on a parchment-lined sheet tray. Bake in the oven until golden brown and crisp, about 15 minutes. Transfer to a paper towel-lined plate to cool. Once the bacon is cool, break into 1/2-inch pieces.
While the bacon is cooking, prepare the bread. Brush both sides of the bread with olive oil, and lay out on a parchment-lined sheet tray. Bake the bread until it starts to brown around the edges, about 6 minutes.
To prepare the goat cheese mixture, place the goat cheese and cream cheese in a mixing bowl. Using an electric mixer, whip the cheeses until light and fluffy. Stir in the chives, and season with salt and pepper to taste.
To assemble the crostini, spread a layer of the goat cheese mixture on the toasted bread. Top with a small spoonful of the Jalapeño Gold candied peppers, and top with a piece of crispy bacon.
