Roasted Garlic Hummus

This homemade hummus is so easy, you'll wonder why you ever bought the store-bought version.

Start to Finish: 1 hour

For this recipe you’ll need:

  • 6 cloves roasted garlic (see note, below)
    One package Abood Market chickpeas, cooked as directed (available at The Chopping Block)
    1/4 teaspoon cayenne pepper
    2 teaspoons ground cumin
    3 tablespoons lemon juice, freshly squeezed
    3 tablespoons extra virgin olive oil, plus additional for garnish
    2 tablespoons tahini
    Salt to taste
    Water as needed
    Smoky paprika, for garnish
      1. Place all of the ingredients in the bowl of a food processor.

      2. Puree until well blended, adding water as needed to make the hummus silky and smooth.

      3. Garnish by making a well in the middle of the hummus and filling the indentation with olive oil. Sprinkle the top with smoky paprika and serve with Pita Chips.

Note:

To roast garlic, slice the top off a whole head of garlic to expose the cloves. Place it in a small ovenproof dish, drizzle with olive oil and cover with foil. Bake at 350º for 40 to 50 minutes, until the cloves are soft and a light golden color.
