Sloppy Joes are transformed into a baked dish topped with polenta that the entire family will love!
Yield: 4-6 servings
Active Time: 40 minutes
Start to Finish: 1 hour, 5 minutes
For this recipe you’ll need:
Preheat the oven to 350º.
To prepare the sloppy joe mixture, heat a sauté pan over medium heat.
Brown the ground beef until the meat is just about cooked through. Add the onion and continue to cook until softened, 2 to 3 minutes. Add the garlic and cook an additional 30 seconds. Drain any excess fat from the pan.
Mix together the ketchup, water, cider vinegar, mustard, brown sugar, lemon juice and Worcestershire sauce. Add this mixture to the ground beef and bring to a boil. Reduce to a simmer and cook, uncovered, until thickened. Spread this mixture in the bottom of a baking dish.
While the filling cooks, make the polenta.
Bring the water or chicken stock and salt to a boil. Whisk in the cornmeal and return to a boil. Reduce the heat and simmer, stirring occasionally, for 20 minutes, or until the polenta is thick and creamy. Stir in the butter and season to taste with salt and pepper.
Spoon the polenta over the sloppy joe mixture, spreading it to the edges of the baking dish. Sprinkle with cheddar cheese, and bake for 25 minutes, until bubbling around the edges.
