Watermelon and Arugula Salad

This summer salad combines the sweet fruit of watermelon with peppery green of arugula for a delicious combination with a savory vinaigrette and crunchy nuts.

For this recipe you’ll need:
- 2 cups seedless watermelon, medium dice
- 2 cups arugula
- 1 small shallot, thinly sliced
- 2 Tablespoons fresh mint, chiffonade
- Red wine vinegar, to taste
- Extra virgin olive oil, to taste
- Salt and pepper, to taste
- 1/3 cup sliced almonds, toasted
Directions:
- Gently toss together the watermelon, arugula, shallot and mint.
- Dress with the vinegar and olive oil to taste and season with salt and pepper.
- Spoon the salad onto plates and top with a sprinkling of the toasted almonds.
