Active Time: 30 minutes
Start to Finish: 1 hour

For this recipe you’ll need:

  • 3/4 cup soy sauce (regular or low sodium)
  • 1/4 cup water
  • 1 cup mirin
  • 1 cup light brown sugar
  • 2 cloves garlic, pressed or grated
  • 2 tablespoons ginger, freshly grated
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 2 tablespoons cool water
    1. Combine the soy sauce, 1/4 cup water, mirin, brown sugar, garlic and ginger in a saucepan, and bring to a boil.

    2. In a small bowl, stir the cornstarch and 2 tablespoons cool water together to dissolve the starch. Stir the mixture into the sauce. When it returns to a boil, reduce the heat to medium low, and gently boil until reduced enough to coat a spoon.

    3. Remove from heat and allow to cool.
