Gravlax: The Cure for Typical Holiday Side Dishes
Nolan joined The Chopping Block team in 2025. A native of the Northwest side of Chicago, but growing up nearby in Lake Geneva, Wisconsin, Nolan received his education from the Culinary Institute of America. He has spent much of his career focused on new restaurant operations and build out. Residing in the North Center neighborhood of Chicago, he can be found working in his urban garden, biking the Chicago River North Branch trails, or entertaining friends and family for a backyard barbecue. In addition, he is a self-proclaimed and proud “Fencing Mom” to his teenage son and daughter, both accomplished saber fencers. Often traveling to local, regional and national events, he keeps his kids motivated, hydrated and “entertained” with dad jokes.
